Peanut Butter Energy Truffles
Amazon Berry Smoothie Bowl
Melt chocolate and coconut oil over double boiler or at 50% power in the microwave.
In medium bowl, combine all ingredients and mix thoroughly.
Dip or spread as desired.
Melt Cacao butter gently in small pan or at 50% power in the microwave.
In a small bowl, combine all ingredients and mix thoroughly. Dough will be stiff but pliable.
Form into 8 truffles by rolling between palms. Cool for 10-15 minutes, until firm.
While Truffles are cooling, chop chocolate bars and temper the chocolate using the double boiler or microwave method.
Dip truffles in chocolate and allow to set up in fridge.
Combine all ingredients but the toppings in a blender and puree until smooth.
Add more Almond Milk as necessary to achieve a smooth but thick consistency.
Scoop into a low bowl and top with your favorite berries, nuts and seeds.
